Banana Bread

This is a simple banana bread recipe, I stole it from BBC Good Food. I increased the amount of bananas, and I don’t bother with the icing on top though since I think that makes it a bit too sweet.

It didn’t rise very much, but still tasted lovely.

Ingredients

  • 140g butter
  • 140g caster sugar
  • 140g self-raising flour
  • 2 large eggs
  • 1 tsp baking powder
  • 3 overripe bananas

Place the mixture into a loaf tin lined with non-stick paper. In loaf tin

Place the tin into a pre-heated oven at 160°C for about an hour. It should be ready when a skewer comes out clean, or the internal temperature is about 94°C. In oven

Remove it from the oven when ready, and let it cool in the tin for about 10 minutes. Cooling in tin
