This is a simple banana bread recipe, I stole it from BBC Good Food. I increased the amount of bananas, and I don’t bother with the icing on top though since I think that makes it a bit too sweet.
It didn’t rise very much, but still tasted lovely.
Ingredients
- 140g butter
- 140g caster sugar
- 140g self-raising flour
- 2 large eggs
- 1 tsp baking powder
- 3 overripe bananas
Method
Cream the butter with the sugar until fully mixed, I used a potato masher and then a fork.
Beat the eggs in a bowl, and slowly mix them into the butter and sugar.
Mix the flour into the batter.
Mash the bananas, and then mix them in too.
Place the mixture into a loaf tin lined with non-stick paper.
Place the tin into a pre-heated oven at 160°C for about an hour. It should be ready when a skewer comes out clean, or the internal temperature is about 94°C.
Remove it from the oven when ready, and let it cool in the tin for about 10 minutes.
Place it on a wire rack to cool further.
Eat with a cup of tea!
